spicy watermelon salad
I've already admitted to being a watermelon junkie: I'll take it any way I can get it. Agua fresca, smoothies, watermelon soda floats, fresh off the rind, in salads - especially in salads. I usually just whip something up with argula, feta, and a balsamic vinaigrette, but the jalapeño dressing in this recipe from Love and Lemons is a game changer (not to mention the addition of avocados). This salad has it all: sweetness and juiciness from the watermelon; spiciness from the jalapeños and arugula; creaminess from the avocado; tanginess from the feta. What more could you ask for?
spicy watermelon & avocado salad

Ingredients
dressing
- 1/3 cup olive oil
- juice of 1 lime
- 1/2 jalapeno, sliced
- optional - 1 clove of garlic, smashed (remove it before using)
- salt & pepper
salad
- watermelon
- lime
- thinly sliced red onion
- cotija or feta cheese
- avocado cubes
- basil
- arugula
method
- Whisk together the dressing, set aside.
- Cube your watermelon, add a few good pinches of salt & a squeeze of lime.
- Assemble the salad and drizzle on as much dressing as you like. (remember to remove that garlic piece). Store extra dressing at room temp for a day or so.
